Makes 9 slices
Ingredients:
- 1 cup whole wheat flour
- ½ tsp baking soda
- ½ tsp baking powder
- ¼ tsp salt
- 2 Tbsp vegetable oil
- ½ cup sugar
- 1 tsp vanilla extract
- 1 large egg (or ¼ cup egg whites)
- ½ cup Greek yogurt (plain or vanilla)
- 1 lemon, juiced and zested
- ¾ cup blueberries
Directions:
1) Preheat the oven to 350-F. In a large bowl, mix together the flour, baking powder, baking soda, and salt.
2) One by one, add and mix in the sugar, vegetable oil, vanilla extract, eggs (or egg whites), Greek yogurt, and lemon juice and zest. Gently fold in the blueberries, then pour the batter into a lightly greased 8×8 square cake pan.
3) Bake for 25-30 minutes or until a toothpick comes out clean. Let cool, then serve.
