FTH’s Cinnamon Raisin Scones

Makes 6 scones

Ingredients:

  • 2 cups whole wheat flour
  • 2 Tbsp sugar
  • ¼ tsp salt
  • ½ tsp baking soda
  • 1 Tbsp baking powder
  • 2 Tbsp coconut oil (or butter)
  • ¾ cup skim milk
  • 1 Tbsp cider vinegar
  • 1 large egg (see Recipe Notes)
  • 1 tsp cinnamon
  • 1 tsp vanilla

Directions:

1) Preheat your oven to 375-F. In a large mixing bowl, combine the flour with the baking soda, baking powder, cinnamon, and vanilla. 

2) Add the coconut oil, milk, and vinegar to the bowl. Gently stir until incorporated and there are no lumps. Add the raisins and mix. 

3) Portion into six even portions of dough. Gently shape, then add to the baking sheet.

4) Bake the scones for 15-18 minutes. Serve hot, or let cool.

Recipe Notes:

  • If you prefer, you may sub in ¼ cup egg whites in lieu of whole eggs.
  • If you do not have whole wheat flour, this recipe can be made using all purpose flour.
