Heart-Healthy Lentil Tacos

Prep time: 15 minutes

Cook time: 40 minutes

Serves 6


  • 1 tsp canola oil
  • 1 medium onion, finely chopped
  • 1 garlic clove, minced
  • 1 cup dried lentils, rinsed
  • 1 Tbsp chili powder
  • 2 tsp ground cumin
  • 1 tsp dried oregano
  • 2-1/2 cups vegetable or reduced-sodium chicken broth
  • 1 cup salsa
  • 12 taco shells
  • 1-1/2 cups shredded lettuce
  • 1 cup chopped fresh tomatoes
  • 1-1/2 cups shredded reduced-fat cheddar cheese
  • 6 Tbsp fat-free sour cream


  1. In a large nonstick skillet, heat oil over medium heat. Add the onion and garlic, and saute until tender. 
  2. Add lentils, chili powder, cumin, and oregano. Cook and stir for 1 minute.
  3. Stir in the vegetable or chicken broth, and bring to a boil. Then reduce heat to a simmer. Cover and simmer until the lentils are tender (about 25-30 minutes).
  4. Once the lentils are tender, cook, uncovered, until the mixture is thickened (about 6-8 minutes). Stir occasionally.
  5. Mash lentils slightly using a potato masher. Stir in salsa and heat through.
  6. Serve in taco shells and top with lettuce, tomato, cheddar cheese, and sour cream as desired.
