FTH’s Sweet & Sour Summer Melon Salad

Serves 4

Ingredients:

  • 2 Tbsp olive oil
  • 2 Tbsp lemon juice
  • 2 cups seedless watermelon, cubed
  • 1 cup cantaloupe, cubed
  • 1 cup honeydew melon, cubed
  • ¾ cup reduced-fat feta, crumbled
  • ¼ cup chopped mint
  • ¼ tsp salt (optional)
  • 1 Tbsp honey (optional)

Directions:

1) In a large, non-metal mixing bowl, combine the watermelon, cantaloupe, and honeydew melon together. Drizzle with lemon juice and olive oil, then stir gently to combine.
