FTH’s Creamy Breakfast Rice Pudding Recipe
Serves 4
Ingredients:
- ½ cup uncooked brown rice
- 3 ½ cups skim milk*
- ¼ cup brown sugar
- ¼ tsp salt
- ½ cup raisins
- 1 tsp ground cinnamon
- 1 tsp vanilla extract
Directions:
1) Preheat the oven to 325-F. Grease a 9-inch square baking dish and set aside.
2) In a saucepan, combine the milk, sugar, rice, and salt. Bring to a boil, then remove from heat. Stir in cinnamon, vanilla, and raisins.
3) Pour into baking sheet, then bake for 15 minutes. Stir pudding, then bake another 15 minutes. Cook another 15 minutes until rice is tender.
4) Serve hot, or allow to chill overnight in the refrigerator.
