FTH’s Hearty Vegetarian Chili (Grain-Free, Gluten-Free & Vegan Optional)
(Serves 8)
Ingredients:
- 2 (15 oz) cans of kidney beans, drained and rinsed
- 1 (6 oz) can tomato paste
- 1 (15.5 oz) can crushed or diced tomatoes
- 1 Tbsp chili powder
- 2 tsp cumin
- ¼ tsp cayenne pepper
- ¼ tsp salt
- 1 onion (white or yellow), diced
- 1 green bell pepper, diced
- 1 clove garlic, minced
- 1 yellow squash, chopped
- 1 Tbsp olive oil
- 1 avocado, ripe
- ¼ cup reduced-fat sour cream
- ¼ cup reduced-fat sharp cheddar
Directions:
1) In a large saucepan, heat up olive oil. Add onion, bell pepper, garlic, and squash and saute until soft.
2) Add the two cans of kidney beans, tomato paste, and tomatoes. Stir in cayenne pepper, cumin, salt, and chili powder.
3) Heat and let the chili come to a simmer.
4) Remove from heat. Garnish each serving with 1 Tbsp of sour cream, 1 Tbsp of sharp cheddar, and ¼ of ripe avocado (to taste).
